This fertile region extends from the Black Sea to the Caspian Sea. With fish from the sea and agricultural valleys, this region has traditionally been rich in food. The cuisine is of superb quality, especially the Georgian – its sophisticated spiciness and pungency and the masterful and lavish use of herbs and spices. We will create cheese and herb-billed breads, salads, soups, stews, stuffed vegetables, sauces and relishes, and learn how their distinct cuisine developed from historic trade routes.
Class Dates: Saturday September 29, October 13, and October 20. All classes from 1:30 – 4:30 pm.
