Salsas for your sweetie!

This Valentine’s Day, try these flavorful, fun and fruity salsa recipes, using in season fruit like pineapple, mango, grapefruit and bananas.

Mango Salsa

Ingredients

  • 1 1/2 cups mango, pitted, peeled and diced

  • 1/4 cup green pepper, diced

  • 1/4 cup red onion, minced

  • 1 tablespoon jalapeno pepper,diced

  • 1/4 teaspoon ground cumin

  • 2 tablespoons fresh cilantro,minced

  • Juice of 1 lime

  • Salt and pepper to taste

Preparation

  1. To prepare salsa, toss mango, green pepper, onion, jalapeno, cumin and cilantro in a mixing bowl with lime juice and season with salt and pepper. Salsa may be prepared up to a day in advance, to allow flavors to combine.

Grapefruit Salsa

Ingredients

  • 2 medium grapefruit, peeled and segmented

  • 2 tablespoons red onion, minced

  • 1/2 cup red bell pepper, diced

  • 1/4 cup cucumber, peeled and cut in small dice

  • 1 garlic clove, minced

  • 2 teaspoons jalapeño, seeded and minced

  • 2 tablespoons fresh cilantro, chopped

  • 1 teaspoon honey

  • 2 tablespoons lime juice

  • Pinch of salt

Preparation:

Carefully chop the grapefruit into chunks. In a mixing bowl, gently stir together all of the salsa ingredients. Let sit for 15 minutes before serving.

Spicy Banana Habanero Salsa

Ingredients

  • 2 tablespoons vegetable oil

  • 2 tablespoons lime juice

  • 2 tablespoons brown sugar

  • 1 tablespoon fresh ginger,peeled and minced

  • 2 large firm bananas, peeled and diced (about 2 cups)

  • 1/2 cup yellow bell pepper, diced

  • 1/2 cup green pepper, diced

  • 1/2 cup red onion, diced

  • 3 tablespoons fresh minced cilantro

  • 1 teaspoon fresh habanero pepper, seeded and minced (1 pepper)

Preparation

In a medium-sized bowl, whisk together the oil, lime juice, brown sugar and fresh ginger. Add the bananas, peppers, onion and cilantro and mix well.

Pineapple Salsa

Ingredients

  • 2 cups diced fresh pineapple

  • ¼ cup diced red onion

  • ½ jalapeño pepper, diced

  • Juice and zest of 1 lime

  • ½ cup chopped fresh cilantro

  • 1 garlic clove, minced

  • ¼ teaspoon sea salt

  • Tortilla chips, for serving

Preparation:

In a medium bowl, combine the pineapple, red onion, jalapeño, lime juice and zest, cilantro, garlic, and sea salt. Season to taste and chill until ready to use. Serve with tortilla chips.
