Peanut Sauce in a Jar

Want an easy way to serve all those lovely local veggies available right now? Want to avoid all or almost all packaging? Here is the sauce for you! Just scoop some lightly cooked veggies onto a bed of rice or quinoa and spoon on this sauce for a satisfying, super-easy meal.

Easy Peasy Peanut Sauce

2 tablespoons freshly squeezed juice from 1 lime (or Santa Cruz juice)

2 tablespoons Chickpea miso (or tamari or soy sauce, available in bulk)

2 teaspoons rice vinegar, available in bulk

2 teaspoons toasted sesame oil, available in bulk

1 teaspoon finely grated peeled fresh ginger

1 clove garlic, minced

1/4 cup CB’s peanut butter, available in bulk (or any nut butter you like)

2 to 3 tablespoons water

Put all the ingredients except the peanut butter in a jar and shake. Add the peanut butter, then shake and/or stir. If you want thinner sauce, add water and shake. Adjust flavoring to taste, such as additional lime or garlic.

Note: Chickpea miso is in the fridge section at the back of the Co-op on the far left. It’s one of my favorite ingredients of all time.
