Cooking with the Co-op: World Flavors for the Home Kitchen - North Africa & Tunisia
Tunisian cuisine is a blend of Mediterranean and Berber. Its distinctive spiciness comes from the many civilizations who have ruled there—Romans, Vandals, Byzantines, Arabs, Spanish, Turkish, Italians (Sicilians), French, and the native Punics-Berber people. This cuisine makes for an especially rich culinary journey and fabulous feast. In this hands-on class you’ll team up with others to cook a medley of Tunisian dishes. When the food’s ready we’ll eat together with lots of lively food focused conversation. The menu will reflect our local fresh produce, with easy-to-use recipes that are “keepers” for the home cook.
Dietary Notes: vegetarian friendly, with some meat based dishes. The classes are always gluten-free but not in a gluten-free facility, using organic produce from the Port Townsend Food Coop.
About the instructor
Sidonie Maroon is a local chef, culinary educator, and writer. She brings people together to create feasts from international menus, using local in-season foods. You will also find her in her kitchen studio developing recipes, working on revisionist baking projects or in her garden.
